I have already written about the Dukan diet, but I will talk about some of its recipes separately, because they are worth a separate page. Today we are presented with bread according to Dukan's recipe, which, in theory, should not harm your figure, unless, of course, you eat it up.

In general, for me, bread, for some reason, is a product that I cannot remove from my diet. For the life of me, I can’t. I can’t eat every soup and salad without bread. Be it black or white. But recently I realized that something needs to be done about it and so I decided to look for recipes for more dietary bread and found Dukan recipes.

And today I want to share them with you. There are a lot of different recipes, but in my opinion, I will introduce you to the best ones in this article.

Yeast bread

According to the rules, bread according to Dukan on Attack should mostly consist of protein components, but bran is also acceptable.

So, to bake delicious dietary bread, take oat and wheat bran (2 tbsp and 1.5 tbsp, respectively ). Grind them into flour using a coffee grinder.

Protein components – protein isolate (3 tbsp), soft cottage cheese (20 g) and kefir (100 ml).

You will also need eggs (3 pcs.), seasonings, salt, sugar substitute. Baking powder (1.5 tsp) and dry yeast (10 g) will add fluffiness to the bread.

Remove kefir from the refrigerator in advance. Dissolve yeast and a sugar substitute tablet in it. After 10 minutes, add bran flour, baking powder, salt, seasonings, isolate.

When stirring, you should get a crumbly mass. Add beaten eggs and soft curd. Transfer the dough into the mold and leave for 40 minutes.

Bake at 180 degrees for about half an hour (check readiness with a toothpick).

Bran bread

This Dukan bread recipe is considered a classic. To prepare it, use a mixture of oat and wheat bran (2 tbsp and 1 tbsp, respectively). You will also need milk (3 tbsp), dry yeast (10 g) and an egg.

Mix the egg with a pinch of salt (you can add a sugar substitute). Dissolve the yeast in warm milk and combine with the egg. Leave the mixture for 10 minutes. Then add the bran mixture. Let the bread rise by transferring the dough into the pan (this will take about an hour). Bake for 45 minutes (180 degrees).

Bran bread

Is it possible to bake Dukan bread without bran? There is such a recipe. Take 30 g of milk powder and corn starch, as well as 50 g of soft cottage cheese. You also need salt, baking powder (5 g) and an egg.

Combine soft cottage cheese and egg. Mix all dry ingredients and add to the curd mass. Mix well and leave for 15 minutes. Line a baking tray with baking paper. Heat the oven to 180 degrees. Bake the bread in the form of flat cakes with a diameter of 15 cm. Cook for about 20 minutes. This bread can be filled by cutting it lengthwise into 2 parts.

Bread in the microwave

You can very well bake bread in a matter of minutes. Take 2 eggs, 4 tbsp. bran (in the form of flour) and natural yogurt (2 tbsp). To make the bread fluffy, use baking soda (0.5 tsp) and vinegar.

Combine eggs, salt, yogurt. Add bran and slaked soda. Line a microwave-safe saucepan with parchment and lay out the dough. Cook for 7-10 minutes (power – 800 W).

Bread in a slow cooker

Today, many housewives have such a useful device in their kitchen as a multicooker. During the diet, it makes life much easier. For example, you can bake bread with it. You will need oat bran (105 g: 30 g wheat and 75 g oat bran), a couple of eggs and 20 g soft cottage cheese or low-fat kefir.

Beat eggs with salt, add cottage cheese (kefir), baking powder (10 g), bran flour. Take silicone molds (4 pcs.) and fill them with dough (not to the top). Place the molds in the bowl. Turn on Bake for 20 minutes.

Bread in a bread machine

The good thing about a bread maker is that it easily copes with kneading dough. You will need eggs (4 pcs.), milk (100 ml) and soft cottage cheese (120 g). You also need bran (200 g), sugar substitute (2 tablets), salt (3 g), dry yeast (5 g).

Load the ingredients according to the bread machine instructions (some models add liquid ingredients first, and some add dry ingredients first). The dough kneading needs to be controlled - if the machine does not grab the components, you should help it using a spatula. Baking is carried out in the Express cycle mode (fast baking).

Bread in the oven

You can eat this bread at all stages of the diet, but during the Attack, exclude grains. You need oat and wheat bran (4 tbsp and 2 tbsp respectively). You will also need an egg, kefir (7 tbsp) and soda (0.5 tsp). Flavoring additives – flax and sesame seeds (0.5 tsp each), ground pepper, and chopped herbs.

Combine bran flour, egg, pepper, salt and herbs. Add kefir with soda dissolved in it. Let the dough sit and put it into a mold, sprinkle with grains. Bake in the oven (the process will take 20 minutes at 180 degrees).

Dukan bread turns out to be quite tasty and satisfying. If you use a sugar substitute, then such baked goods can replace buns that were safely forgotten during the diet.

Dukan bran bread: no flour, no gluten, no additional additives

We will need:

  • 8 tablespoons of oat bran.

  • 300 grams of soft low-fat cottage cheese.
  • 3 chicken eggs.
  • 11 g (bag) Dry instant yeast.
  • 1 teaspoon salt.
  • Any spices to taste.

Preparation of yeast bread according to Dukan:

Mix all dry ingredients in one bowl: bran, salt, spices, yeast.

In a separate bowl, lightly beat the eggs and cottage cheese with a fork; it is advisable that they be at room temperature, so remove them from the refrigerator in advance.

Mix the dry and wet ingredients (you will get a very thick “sour cream”), cover the bowl with a towel and let stand in a warm place for one hour, the yeast should be activated.

Many experimenters suggest grinding the bran and flour, but my advice to you is don’t do it. Yes, this allows you to achieve a looser, more fluffy crumb. But at the same time, the cleansing benefits of bran disappear to almost nothing. But this affects the taste slightly. Even if the crumb is rough, it is still quite porous and pleasant.

Take a long cake pan or any similar one, line it with non-stick paper and carefully spoon out the batter. Flatten and sprinkle with seasonings. This bread is prepared in the oven, in the form of a brick, but, in principle, it can also be baked in a slow cooker.

Place the dough in an oven already preheated to 180 degrees. Bake at 180 - 200 degrees for about an hour. A brown crust should form. It may only take 40 minutes. Today, many people prefer not to buy certain products, but to cook them at home. This also applies to bread. Among my friends and relatives there are people who are passionate about baking. Someone uses a bread machine for this, which does everything itself: it kneads the dough and calculates the amount of ingredients.

There are also those who have mastered the technique of making bread with their own hands from scratch, stock up on sourdough and spend several days to end up with a tasty and healthy loaf of bread. I admit, I don’t know much about baking yet, but I’m just getting acquainted with this science.

I don’t have a bread machine, and I haven’t mastered complex techniques yet. But I still want homemade bread. Moreover, it should preferably be yeast-free and dietary. I managed to find one of these recipes - I’ve been making bran bread without flour for several months now.

What is most pleasing is that the process of preparing such bread takes no more than 20-30 minutes. In addition, bran bread is healthy and dietary. Just what you need! The recipe is known as Dukan bread, the only difference is that according to Dukan, it is recommended to use a sweetener instead of sugar.

Well, for me, you can generally get by with just a pinch of salt as a flavor enhancer.

Bran bread

For quick bran bread you will need

  • 2 eggs,
  • 3 tbsp. spoons of soft cottage cheese,
  • 5 tbsp. spoons of oat bran,
  • 3 tbsp. spoons of wheat bran,
  • 1/4 teaspoon baking powder,
  • salt, sugar to taste.

Break the eggs into a bowl convenient for mixing products and beat them a little with a whisk.

Add oat and wheat bran to the beaten eggs. They should be medium or finely ground.

Using a fork or whisk, thoroughly mix the eggs with bran so that there are no lumps left. You can use a blender, although there shouldn't be any problems at this stage.

Now add soft cottage cheese, baking powder, salt and sugar to taste. Instead of sugar, you can use a sweetener for an even more dietary option. At this stage, you can also add any spices and make the bread fragrant. Sometimes I add dried garlic, dill, sesame or anise.

Mix all ingredients well again. Let the flourless bread dough stand for 3-5 minutes, and during this time you can preheat the oven to 180 degrees.

We transfer the mixture into a mold, I use silicone. Since the bread is prepared very quickly and without hassle, I make a small portion for 1-2 times. In my form, the bread turns out to be short, if you want it to be fuller, then take a smaller form or increase the amount of ingredients.

Place the mold in a preheated oven at 190 degrees. oven for literally 20-30 minutes. You can tell when it’s ready by its elastic, golden crust. Let the finished yeast-free baked goods cool and you can try it!

  • a pack (200 g) of crab sticks;
  • 3 tablespoons corn starch;
  • a glass of milk;
  • 3 pieces of chicken eggs;

When a chef creates in the kitchen, his imagination cannot be described. To prepare bread according to Dukan, you can choose any recipe, even eyeball the permitted ingredients. Some housewives do not limit themselves to baking in the oven, bread machine and slow cooker.

Some people fry the dough in a frying pan in the form of pita bread with the addition of grated cheese (low-fat), others use a grill and turn the bread into a hot sandwich with vegetables or pizza, others cook it in the microwave.

Use any cooking method and dough recipe you like, because Dukan bread is a very healthy and tasty product.

Cooking methods

There are many recipes for healthy baking that do not require special culinary skills or waste of unnecessary time. Their main similarity is that the main ingredient is oat bran. It is permissible to use the following spices:

  • salt;
  • sesame;
  • turmeric;
  • flax-seed.

In the yeast version, dry yeast is used, and instead of granulated sugar, you can add a sweetener.

It is prohibited to use glucose, sorbitol and fructose as a sweetener. Synthetic analogues are also not welcome, as they are harmful to health. Preference is given to natural products, such as stevia. This honey herb is low in calories and does not affect blood glucose levels.

Baking soda slaked in vinegar or lemon juice gives it a richness. Natural yogurt and kefir are allowed to be added as complementary components. At the final stages of the diet, it is not prohibited to add starch and corn flour. If you add a little coriander to the composition and sprinkle it on the surface, the bread becomes similar to Borodino bread.

Classic version

This bread is baked in the oven in the standard way. If desired, you can add dried or fresh parsley, dill, and cilantro.

Cinnamon will add sweetness to the product. The spicy taste is created by the inclusion of red, black or pink ground pepper. The rich color comes from turmeric.

For baking you will need:

  • 100 ml low-fat kefir;
  • 40–50 g oat bran;
  • 1 packet of baking powder;
  • 30–35 g wheat bran;
  • one chicken egg;
  • 20 g cottage cheese;
  • 10–15 g of fresh herbs;
  • 3 g each of salt and soda;
  • 2 g pepper;
  • 3 g flax seeds.

It takes 30 minutes to prepare. Calorie content per 100 g of product is 129 kcal.

Sequence of further actions:

  1. 1. Two types of bran are mixed and ground into flour.
  2. 2. Add dry spices, herbs and egg.
  3. 3. Quench the soda in kefir and pour it into the total mass.
  4. 4. The curd mass is also placed there.
  5. 5. Knead the dough and wait about 15 minutes, then transfer it to the mold. Sprinkle flax seeds on top.

Place in the oven, preheated to 180–190 °C, bake for 20–25 minutes.

In the microwave

The calorie content of the dish is 123 kcal per 100 g.

Cooking in the microwave takes little time, and the result will delight you with an airy crumb.

Bread toast can be eaten with low-fat ham at the Attack stage, and with fresh lettuce and pickled cucumbers at the Cruise stage. The optimal single serving is no more than 100 g.

Ingredients:

  • oat bran - 40–45 g;
  • wheat bran - 25 g;
  • baking powder - 2 g;
  • chicken egg - 1 pc.;
  • low-fat cottage cheese - 30 g.

Cooking method:

  1. 1. The bran mixture is ground in a blender or coffee grinder.
  2. 2. Beat the egg with a fork until smooth.
  3. 3. Combine all components and mix.
  4. 4. Pour into a mold for a microwave oven.
  5. 5. Set the power to 700–750 W, bake for 4 minutes.

After cooling, cut into portions and serve.

In a slow cooker

Such baked goods contain no more than 120 kcal per 100-gram serving. The multicooker bread turns out a little sticky, so it is recommended to dry it before using. Kefir in the composition gives the crumb a porous structure. To improve the taste, it is not forbidden to add fresh parsley and dill, and various seasonings.

Ingredients:

  • 20–25 g oat bran;
  • 1/2 sachet of baking powder;
  • 1 tsp. salt;
  • 2 eggs;
  • 150–170 ml low-fat kefir.

Step-by-step instruction:

  1. 1. The bran is ground to flour.
  2. 2. Add baking powder.
  3. 3. Beat the eggs until smooth, add some salt and mix with the fermented milk product.
  4. 4. Both masses are combined and a homogeneous plastic dough is kneaded.
  5. 5. Place in a multicooker bowl, previously greased with olive oil. You can use a silicone mold of suitable diameter.
  6. 6. Set the “Baking” or “Multi-cook” mode.

In both cases, bake the product for 25 minutes at a temperature of 180 °C.

In the bread machine

It takes 2 hours to prepare. Calorie content - 123–125 kcal per 100 g. Unlike the previous recipe, baking in a bread machine will require more time. The ingredient composition is almost identical. Instead of sugar, it is allowed to include a sweetener. Suitable spices include turmeric, coriander, and nutmeg.

It is necessary to prepare the following set of products:

  • bran - 20–30 g;
  • baking powder and dry yeast - 1 package each;
  • salt - 1 teaspoon;
  • chicken egg - 2 pcs.;
  • milk - 160 ml;
  • sugar substitute - 2-3 g.

How to cook step by step:

  1. 1. First, place yeast, powdered sweetener, ground bran flour and salt into a tray.
  2. 2. Then pour in the pre-beaten milk and eggs.
  3. 3. Turn on the “Kneading” mode.
  4. 4. After obtaining a homogeneous mixture, set the “Baking” mode.

Bake the bread for 2 hours.

Bran buns

You can eat such delicious buns even at the initial stage of the diet - “Attack”. For six pieces you will need the following composition:

  • bran - 4 tablespoons;
  • eggs - 1–2 pcs.;
  • baking powder - on the tip of a knife;
  • milk powder (5%) - 2-3 tbsp. l. ;
  • stevia - 2 tablets.

Sequencing:

  1. 1. Place all dry ingredients into a separate bowl.
  2. 2. Add the resulting egg mixture and mix thoroughly.
  3. 3. Distribute into silicone cells, which are usually used for baking cupcakes.
  4. 4. First preheat the oven to 180 °C. Place the blanks for 15–20 minutes. Readiness is checked by the formation of a golden crust. For authenticity, pierce the buns with a wooden skewer or match. If it is dry, then it’s time to remove the baked goods.

If you make this bread into flat cakes, you can use them as a base for sandwiches.

You are allowed to eat no more than 2-3 pieces per day.

Bread

The recipe for Dukan bread in a frying pan is suitable for sandwich lovers. You will need:

  • 3 tbsp. l. oat bran;
  • 2-2.5 tbsp. l. natural yogurt without additives;
  • 1 whole egg or 2 yolks.

Sequence of steps:

  1. 1. Beat the eggs thoroughly with a blender until foam forms.
  2. 2. Add the remaining ingredients.
  3. 3. Heat the pan. It is advisable to use cookware with a non-stick bottom so that you do not have to add oil.
  4. 4. Spoon out the batter like pancakes. Fry on both sides.

They are usually eaten in their original form or in combination with salmon, soft cheeses, and low-fat ham.

Bread for the Attack phase

From the presented list of products, a loaf is made for 20 people. The calorie content is 120–123 kcal per 100 g. This recipe is quite complex, but balanced, as it is designed for the best possible result for getting rid of extra pounds. This is exactly the kind of bread you can safely eat at Ataka. By adding flax seeds, you get a product that is acceptable at other stages of the diet.

Ingredients:

  • oat and wheat bran - 40 and 30 g, respectively;
  • protein isolate - 55–60 g;
  • eggs - 2–3 pcs.;
  • soft curd mass - 20–25 g;
  • fresh kefir - 100 ml;
  • powdered yeast - 10 g;
  • baking powder - 1 sachet;
  • table salt - 3 g;
  • sweetener - 1 tablet.

Baking method:

  1. 1. Yeast is diluted in kefir, wait until the reaction begins. Add sugar substitute and bran.
  2. 2. The remaining dry components, including the isolate, are combined. Then it is added to the previously obtained liquid yeast mass.
  3. 3. Cottage cheese and eggs are mixed in there. Leave in a warm place for 30–35 minutes.
  4. 4. When the dough has risen, form a ball and place in a prepared heat-resistant pan. It is recommended to wait another 30 minutes for the rise to occur again.

Bake at a temperature of 190–200 °C for 30–35 minutes.

Dietary bread according to Dukan is a satisfying and healthy product. This alternative can be used not only by people losing weight using this method, but also by everyone who adheres to a healthy lifestyle.

Oat bran bread and sandwiches

On the Dukan diet, traditional and so familiar bread can be replaced with bread made from oat bran without wheat flour.

It is not for nothing that bread with the addition of bran or crushed grain is the healthiest - because it has a high content of dietary fiber, which reduces calorie content, helps the intestines work correctly and remove harmful substances from the body. Banal sandwiches with such bread are not only tasty, but also incredibly healthy!

Oat bran bread tastes little different from “regular” bread made from bran flour. With this bread you can make delicious sandwiches suitable for the Attack and Cruise phases.
