There are many ways to make bone broth. It is most often boiled from beef bones, but there is nothing stopping you from taking bones from a farm pig or sheep. Most importantly, look for a farmer who has raised the animals as naturally as possible.

But how do you make bone broth and, most importantly, make it tasty? Many novice lowcarbers note the specific taste of the drink. And some people, not prone to streamlined formulations, even say that the smell and taste of bone broth makes them sick.

I love bone broth in any form, but I love Vietnamese pho bo soup (which is also based on bone broth) even more, so much so that I will sometimes break the keto guidelines and eat some rice noodles for it.

That's why I add the heat and spice of pho bo to my bone broth. The result is a drink that not only nourishes and energizes you in the morning, but also quite invigorates.

There are two optional steps in the bone broth recipe. I recommend trying different options and deciding which one you like best.

First, try roasting the bones with whole onions, coarsely chopped carrots and herbs. The broth will have a richer taste and color.

Secondly, add vinegar to the broth.

All the ingredients are here by eye. One rule is 2 times more water than bones. How much carrots or ginger to add to the broth is up to you. I have so much ginger that my throat is sore.

  • Per 100 g of vegetable broth there are 0.65 g of protein, 0.18 g of fat, 2.36 g of carbohydrates. Energy value does not exceed 12.85 kcal;
  • In 100 g of fish broth from low-fat fish (for example, hake), the amount of protein is 4.49 g, fat - 0.61 g, carbohydrates - 0.71 g. Energy value - 26.15 kcal;
  • Pork broth contains the most calories. 100 g of this dish contains 23.15 g of protein, 8 g of fat, and no carbohydrates. Energy value – 40 kcal;
  • The calorie content of beef broth may vary. If the broth is cooked from the pulp, then per 100 g of the finished dish there will be 2.3 g of proteins, 1.1 g of fat, 2.6 g of carbohydrates. The energy value in this case will not exceed 28.8 kcal.

The calorie content of meat broth can be slightly reduced (to 28.6 kcal) if you cook it on a beef bone. In this case, 100 g of broth will contain 4 g of protein, 1.3 g of fat, 0.2 g of carbohydrates, and the energy value will be 28.6 kcal.


Based on this, we can conclude that the calorie content of meat broth (pork) will be the highest, while the calories in mushroom broth will be extremely low.

Broth, despite the fact that in nutritional nutrition systems focused on humans, it is recommended to cook soups in broth, the popularity of meat-based ones is not desired. And the most healthy, satisfying, but at the same time light dish is considered to be chicken to lose weight, which can be cooked and has its taste from any part. It can also be used for soups and borscht, an easy and independent dish, and even excellent for stewing vegetables. Chicken broth is a kind of broth that is prepared during illnesses, depending on the days when you can look and just want to drink, and the calorie content to the usual menu, an assistant in using strength and immunity. And because of the demand for meat, it would be a good idea to consider this pork in more detail on the question of the fat content of calories in chicken broth, why they are gained from it, and how they can be reduced.

And yes, it’s worth knowing a few things about chicken that will allow you not to wonder whether there are calories in chicken broth in a dish, and how to use the broth without any worries. Firstly, cook with whatever you can from any part of the salted meat, but it is advisable to peel it a little before, and the fresh offal itself in cold water for more hours. It is recommended to cook in almost the same water: in the first place, cook the chicken for about twenty to thirty minutes, leaving excess fat and protein on the surface in the form of grayish-white salt. 1. An important point - blanching

Place the bones you are using in boiling water in a sealed container for 2-3 minutes. Drain the water. Blanching helps remove any nasty little bits from the bones. If you use the right bones, then there will definitely be such residues on them.

True bone broth is made from bones and trimmings that are high in collagen, such as bone marrow, knuckles, and drumsticks. In addition to beef, which is traditionally considered suitable for bone broth, it can also be made with lamb, pork, chicken, veal... whatever you want. By the way, properly prepared broth, due to its high collagen content, gels at room temperature.

So, we prepare the “correct” broth: blanch the bones, then fill them with cold water, bring to a boil and cook over high heat for 20 minutes before draining.

2. Don't add too many ingredients

A delicious bone broth calls for vegetables and spices, but don't add everything. Use no more than 5 additional ingredients at a time. For example: onions, carrots, garlic, celery, bay leaf, bunch of herbs. Place them after removing the foam, 1.5-2 hours before the end of cooking.

3. Use a large enough container to prepare the broth.

The thigh bones you use for the broth are quite large. Take the largest, heaviest pot you have, fill it with bones and carefully selected seasonings. Add enough water to barely cover the bones, bring to a boil, reduce heat and leave to simmer with the lid on. The ratio of bones to water should be approximately the same so that the resulting broth is sufficiently flavorful. Too much liquid will make the broth taste watery.

Recommendations for broth cooking time: beef bones - 4.5-5 hours, lamb and pork bones - 3.5-4 hours, chicken (and other poultry) - 2-2.5 hours, fish - 1.5-2 hours.

You may need to add water during the process. Do this in advance before the water boils, otherwise the broth will become cloudy.

If you choose to simmer the broth longer than recommended, remove any remaining meat from the bones when done. Return the bones and cook further.

4. Cook the broth long enough

Question: How long should I cook bone broth? Answer: How much time do you have? You can even leave the broth on the stove overnight. If the bones are thick and strong, you need to cook them long enough to get all the flavor out of them. Of course, this method is not suitable for preparing simple broth, such as chicken broth. Smaller, thinner bones cooked in the above manner will fall apart after a few hours on the heat and will not add much flavor to the broth.

5. Cool the finished broth quickly

Hot broth can become a breeding ground for bacteria. Cool it down as quickly as possible. This will help keep the broth fresh longer. Once you have strained the broth, add ice and pour into a shallow, wide container where it will cool faster. Don't worry about ice diluting the broth; properly cooked broth is so rich in flavor that a few ice cubes won't change the flavor. One thing is for sure: do not put hot broth in the refrigerator. This will not only lead to bacterial growth, but will also change the temperature inside the refrigerator, which could cause other food items to spoil.

6. Cook the broth in advance and store it in the freezer.

Strain the finished broth through a fine sieve to remove small curdled foam. If you need to store it, put it in small jars or plastic bags. Pour the broth into the jar 2/3 full, leaving free space at the top. When frozen, the broth expands and needs room to expand so it doesn't crack the glass.

Use broth for soups, aspic, add to vegetables and cereals when cooking instead of water. This will significantly enrich any of your dishes with nutrients and give it a rich taste.

  • water – 2 l;
  • lemon juice – 20 ml;
  • bay leaf – 1 pc.;
  • parsley root – 50 g;
  • onions – 100 g;
  • black and allspice peas, parsley, salt - to taste.

Cooking method:

  • Mix water with lemon juice, pour over prepared fish bones, and put on fire.
  • After the water boils, add the onion, peeled and cut in half, and parsley root, peeled and cut into circles, into the pan. Continue cooking for 40 minutes.
  • Add salt, add spices, cook for another 10 minutes.

  6. Carrots – 3 pcs.
  7. Bulbs – 3 pcs.
  8. Parsley - 1 bunch.
  9. Salt - to taste.

Place the seeds in a saucepan, add apple cider vinegar and water. Everything is left for 1 hour. If there is not enough water and the bones are not covered with water, you need to add more. Celery is cut into several parts, carrots into halves, onions into 2.4 parts.

Add vegetables and bring to a boil. Then the foam is removed when the broth boils. It is important to reduce the heat so that the product simmers gently. The lid must be tightly closed. It cooks for 24-72 hours. In 10 minutes, add parsley, spices, spices. The broth must be left until it cools, after which it requires straining.

How to store?

This broth can be stored for 5 days in a good refrigerator (that is, in one that can ACTUALLY keep the temperature no higher than +5).

If you do not plan to eat all the resulting 2 liters at once or within the next 5 days, then you can freeze the broth, dividing it into portions of the desired size. For example, half a liter. I make this in plastic jars with lids. You can also just use plastic bags: you can then simply cut them and put the finished ice block of broth directly into a saucepan under a lid over low heat to melt this miracle of healthy nutrition.

How interesting: with the advent of bouillon cubes and the focus on vegetables, we completely forgot how to use real broth! But once upon a time this was an entire art! Moreover, not for the poor, but precisely as part of haute French cuisine and gourmetism.
