“Forastero” is considered the cheapest, since it is the most abundant, and the production of chocolate from this variety is more than 80%. Chocolate made from the criollo variety is called elite, and its production is less than five percent.

Have you bought a chocolate bar in a store that, when opened, turned out to be covered with a whitish coating? Of course, the first question that arises in your head will be: “Is it possible to eat such a dessert?” Experts say that there is nothing terrible in such a phenomenon. The presence of a “gray” coating on the surface of a chocolate bar indicates non-compliance with storage conditions. Most likely, it melted and then froze again. During this process, a light fraction of cocoa butter came to the surface and formed a white coating. Therefore, experts say that the presence of such a “gray” coating on chocolate generally indicates its high quality, and the dessert can be safely eaten without any harm to health.

When chocolate is frozen, a white coating may also form. But this is a different story. This coating consists of sugar crystals. It is better to refuse to purchase such a product.   • grated cocoa – 155 g;
  • cocoa butter – 100 g;
